Pressed Conger Eel (Hamo) Sushi in Kyoto, Japan

Kyoto-style pressed conger eel (hamo / 鱧) sushi, a type of oshizushi (押し寿司) or hako-zushi (箱寿司) that has been pressed in a box. Hamo sushi is particularly difficult to prepare due to the number of tiny bones that must be cut through with special heavy knives known as hamokiri (鱧切). Served at Musashi Sushi (寿しのむさし 三条本店), a Kaiten-zushi (回転寿司) restaurant in Kyoto, Japan where most everything is served on a conveyor belt.
