Kato Sake Brewery (加藤酒造店) “kassei” (active) nigori sake (活性にごり酒), a seasonal product from Sado Island in Niigata Prefecture. This is an unfiltered, pure rice (junmai or 純米酒) sake fermented in the bottle. Described by the brewer as “Kaze Yawaraka” (かぜやわらか), meaning “cold and mild”, a custom description with its own back story. For sale at Tominaga Sake Shop (トミナガ酒店) in Kyoto, Japan.
