Hot Amazake in Kyoto, Japan

Amazake (甘酒), a sweet fermented rice drink with relatively low alcohol, served hot in Kyoto, Japan. Made by mixing a type of mold known as kōji (ニホンコウジカビ) with rice which develops a natural sweetness as the carbohydrates break down into sugars. Similar to other sake production, just not taken as far.
