Shaanxi-style Old Tongguan buns for Rou Jia Mo in Beijing, China

“Old Tóngguān” buns for making ròu jiā mó (肉夾饃) in Beijing, China, meat sandwiches sometimes affectionately called “Chinese Hamburgers”. Once these flaky layered rolls are split and filled with meat, they are known as Lǎo Tóngguān ròu jiā mó (老潼关肉夹馍), a specialty of Shaanxi province.
